Cosmos Premier namagashi sweet: nerikiri dough
Nerikiri dough is made of sweetened bean paste steamed with glutinous rice flour as a binder to give it
a thicker, stickier texture. It's the most commonly used dough in making premier namagashi sweets and it's
simply anko which has been adapted. Sometimes nerikiri dough is shaped using wooden molds, but at our shop we use methods such as squeezing it in cloths and shaping it with spatulas, just as has been done since long ago.
Autumn Maple Premier namagashi sweet: kinton dough
Kinton is written "golden group," and it is a confection which is essential to the category of
premier namagashi sweets. The dough for the kinton is passed through a strainer kept especially for
this purpose, shredding the dough. The kinton dough fragments are then carefully placed around a small
ball of anko with chopsticks.
